1 1/2 oz. Dark Rum
1/2 oz. Lime Juice
1/2 oz. Lemon Juice
1/2 oz. Pineapple Juice
Grenadine

Shake the rum and juices together over ice and strain into an ice-filled
rocks glass. Stick the fruits together
with a toothpick and use to garnish before serving.
Variations: Substitute
maraschino liqueur, or any other sweet fruity liqueur, for an even more exotic
drink.
Tequila Sour

1 1/2 oz. Tequila
3 oz. Sour Mix

Cherry
Shake with ice and strain into a chilled cocktail glass. Garnish with the cherry and serve.
Tequila Sunrise

1 1/2 oz. Tequila
3 oz. Orange Juice
1/4 oz. Grenadine
Pour the grenadine into a tall glass, and fill with ice. Pour the
tequila gently down the side of the glass, to maintain the separate grenadine
layer. Repeat with the orange juice,
garnish with the fruit, and serve.
Tom & Jerry

3/4 oz. Brandy
3/4 oz. Rum
1 Egg(s)
(separated)
1 tsp. Confectioners' Sugar
1 tbsp. Hot milk
Nutmeg
Use a fork or whisk to beat the white and yolk of the egg, in separate
containers. When the white becomes a
bit stiff, add the sugar and beat again.
Add the yolk, then stir in the brandy and rum. Still stirring, pour in the milk. When everything is well blended, top with a sprinkle of nutmeg
and serve immediately.
Variations: Substitute 1 1/2 oz.
of rum (leaving out the brandy) to mix a Tom & Jerome.
Tom Collins
2 oz. Gin
1 oz. Lemon Juice
1/2 oz. Sugar Syrup
Club Soda
(to fill)
Maraschino
Cherry
Mix the gin, lemon juice and sugar syrup together in an ice-filled
collins glass. Top off with club soda,
stir, and garnish with the cherry before serving.
Tips: For a less flavorful
shortcut, substitute bottled Collins Mix for the lemon juice, syrup and soda.
